Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup almond flour

  • 1/4 cup almond butter
  • 1/4 cup + 2 Tbsp maple syrup (divided)
  • 1/4 tsp kosher sea salt

Instructions

  1. Preheat oven to 375 degrees. Line a sheet pan with parchment paper and set aside.
  2. Add oats, almond flour, butter, almond butter, 1/4 cup of the maple syrup and salt to a food processor. Pulse until a ball of dough forms.
  3. Roll out dough to 1/4″ thickness (it should make a circle about 12″ in diameter). Bake 10 minutes; cool completely.
  4. Meanwhile mix mascarpone cheese and remaining 2 Tbsp maple syrup in a small bowl.
  5. Once crust is cool, spread cheese mixture on top and then arrange fruit.

Notes

  • This is best served immediately, but you can chill for up to one day if needed. Bring to room temperature before serving.
  • If you don’t have a food processor, you may be able to use a blender to mix the crust ingredients but just make sure it comes together in a ball of dough before rolling!
