Ingredients

Scale
  • 1/2 cup mango, small diced
  • 1/2 cup black beans, drained and rinsed
  • 1/2 small red bell pepper, small diced
  • 1/4 cup red onion, minced
  • 2 Tbsp cilantro, chopped
  • 1/2 jalapeño, seeded and minced
  • 1/2 lime, zested & juiced
  • 2 Tbsp pepitas
  • generous pinch of kosher salt

Instructions

  1. Mix everything together in a small bowl until well combined. Refrigerate for at least one hour to let the flavors really come together.
