Ingredients

Scale
  • 2 cups old-fashioned rolled oats
  • 15 oz can light coconut milk
  • 2 tablespoons maple syrup (divided)
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla paste (or extract)
  • 1/4 teaspoon kosher salt
  • 2 cups finely chopped strawberries
  • 1/4 cup toasted coconut flakes (unsweetened)

Instructions

  1. Add oats, coconut milk, half the maple syrup, chia seeds, cinnamon, vanilla paste and salt to a medium bowl. Whisk well to combine. 
  2. In a separate dish, mash the strawberries with the remaining tablespoon of maple syrup. 
  3. Layer oat mixture and mashed strawberries in four separate jars or airtight containers. Cover and refrigerate.
  4. Top with coconut just before serving.
