My Strawberry Goat Cheese Salad is the spring salad you’ve been searching for! It makes a great addition to a brunch spread or holiday meal. Four simple ingredients (plus a homemade dressing!) is all you need to make this showstopper.

Ingredients

Scale
  • 1/4 cup champagne vinegar
  • 1 medium orange, juiced
  • 1 tsp honey
  • 1 tsp dijon mustard
  • 1/2 cup extra virgin olive oil
  • salt & pepper to taste
  • 5 oz clamshell of spring mix
  • 8 oz strawberries, sliced
  • 2 oz goat cheese crumbles
  • 1/3 cup sliced almonds, toasted

Instructions

  1. Make your dressing: add vinegar, orange juice, honey and dijon to a jar. Mix with a fork until combined. Add olive oil and shake well. Season with salt and pepper to taste. 
  2. Add spring mix and strawberries to large salad bowl. Toss with dressing per preference (you won’t need all of it). Top with goat cheese and sliced almonds just before serving.
